Low Cal Pineapple Upside Down Cake

Ingredients:

  • 1/4 cup brummel
  • 1/4 cup brown sugar
  • 1/2 cup splenda
  • 2 cups pineapple
  • 1 1/4 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsweatened applesauce
  • 1 cup splenda
  • 1 large egg

Directions:

  1. Topping: Melt butter in a small skillet on direct heat.
  2. Add brown sugar and stir until well blended and bubbly.
  3. Pour into a 9 square baking dish, spreading to cover the bottom.
  4. (Alternately, microwave butter and brown sugar in a 9 square glass baking dish till well blended and bubbly).
  5. Arrange pineapple spears on top of the brown sugar in a sun-burst pattern.
  6. Chill in refrigerator while preparing batter.
  7. Batter: Sift together flour, salt and baking powder.
  8. Cream shortening/butter and sugar in a mixing bowl until light and fluffy.
  9. Add egg and vanilla and beat until smooth.
  10. At low speed, and in alternate additions, add in the flour and orange juice, beginning and ending with the flour mixture.
  11. Beat only until smooth.
  12. Remove cake pan from the refrigerator and spread batter over topping.
  13. Bake at 325 degrees for 40 minutes.
  14. Remove from oven, let stand for 5-10 minutes.
  15. Invert on a plate and serve warm.
