Loaded Baked Potato Casserole

Ingredients:

  • cooking spray
  • 2 (12 oz) cans evaporated milk
  • 2 cups water
  • 6 tbsp butter or 6 tbsp margarine
  • 3 (5 oz) boxes hungry jack cheddar and bacon potatoes
  • 2 cups sour cream
  • 1/2 cup chopped chives or 1/2 cup green onion

Directions:

  1. Heat oven to 350°F Spray a 13x9 inch baking pan with nonstick cooking spray.
  2. Combine evaporated milk, water, butter, potato slices, and sauce mix in a 5-quart pot.
  3. Cook over medium heat, just until moisture comes to a boil. Remove from heat. Stir in sour cream and chives or green onions, Pour into prepared pan. Sprinkle with cheese.
  4. Bake 40 minutes or until bubbly and golden brown.,.
