Linguine With Clam Sauce

Ingredients:

  • 1 (16 oz) package cooked linguine
  • 8 cloves minced garlic
  • 2 tbsp olive oil
  • 2 tbsp flour
  • 1 1/2 cups clam juice
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • 1/2 tsp thyme
  • 4 (6 1/2 oz) cans drained minced clams (you can reduce the amount of clams to suit your taste. i will only use groton's)
  • salt and pepper

Directions:

  1. Melt butter in moderate sized pot, add oil and fresh garlic.
  2. Saute until garlic is soft and golden, but not too brown.
  3. Stir in flour and blend.
  4. Slowly add clam juice, simmering until sauce thickens a tad.
  5. Add the oregano, basil, red pepper, and clams.
  6. Simmer for about two minutes or until clams are heated through.
  7. Salt and pepper to taste.
  8. Serve over cooked linguine.
  9. Garnish with parsley.
