Ingredients:

  • 3 tsp yeast
  • 1/4 cup warm water
  • 1-1/2 tsp salt
  • 1 cup hot water
  • 1-1/2 cup flour
  • 1-1/3 cup rye flour
  • 1/2 tsp fennel seed (i add a tiny bit more,maybe a pinch)

Directions:

  1. Soften yeast in 1/4 cup warm water.
  2. In large bowl combine molasses,salt,instant coffee and butter.
  3. Add hot water and stir until molasses and coffee is dissolved.
  4. Cool to lukewarm.
  5. Stir in rye and whole wheat flour,beat well.
  6. Add softened yeast and fennel seed,mix well.
  7. Stir in enough all purpose flour to make a soft dough.
  8. Cover and let rest about 10 minutes.
  9. Knead...Kneading bread dough always seemed therapeutic to the soul.
  10. Knead the dough on floured surface till smooth and satiny(about 10 mintutes).
  11. Place dough in a lightly greased bowl,turn to grease surface.
  12. Cover and let rise in warm place till double in size.
  13. Punch down.
  14. Divide in two portions,place in greased loaf pans.
  15. Cover and let rise in warm place until double in size.
  16. Remove cover.
  17. Bake in hot oven at 375 degress for about 30 to 35 minutes.
  18. If you llike a soft crust,brush with butter.
  19. The Aroma of fresh baked bread and the pure pleasure of that first bite...Heaven!!
