Lentils with Red Bell Pepper and Feta

Ingredients:

Directions:

  1. Cook the lentils in boiling water until just tender, about 15 - 20 minutes. Test them to make sure they don't get mushy.
  2. Finely dice the red bell pepper and the onion and place in a medium large bowl.
  3. Finely mince the garlic or put through a press. Prepare a vinaigrette with the lemon juice, balsamic vinegar, mustard and garlic and mix well.
  4. When the lentils are tender, drain them well. Add them to the bell pepper and onion, add half the vinaigrette and mix. Allow to cool for about 5 minutes. Then add the rest of the vinaigrette and the feta.
