Lentils With Pasta and Caramelised Onions

Ingredients:

Directions:

  1. Slowly fry the onion in 2 tbsp oil for 15-20 minutes until brown and caramelised, stirring often.
  2. Rinse the lentils and boil them in plenty of water until they are just tender.
  3. Crush the tagliatelle in your hand and drop the pieces into the pan with the lentils - there should be enough water to cover them.
  4. Add salt, stir and boil vigorously for 6-7 minutes,until the pasta is cooked al dente.
  5. Drain, adjust the seasoning, and toss with the remaining olive oil, the fried onion and the parsley.
  6. Can be eaten hot or at room temperature.
