Lentil, Rice & Chickpea Casserole

Ingredients:

  • 3 tbsp olive oil
  • 2 cups onion
  • 2 cups rice
  • 1 cup lentil
  • 19 oz chick peas
  • 28 oz tomato
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/2 tsp cardamom

Directions:

  1. Heat oil
  2. Sautee onions till brown
  3. Remove onions
  4. Brown rice in remaining oil
  5. Add lentil chickpeas, oinions and spices
  6. Stir
  7. Add in tomatoes and liquid from can
  8. Bring to a boil
  9. Simmer 30 minutes
  10. Serve and garnish with parsley
