Ingredients:

  • 1 1/4 cups all-purpose flour , plus
  • 1/2 tsp salt
  • 3/4 cup cornmeal
  • 1/4 cup corn oil
  • 2 cups soymilk
  • 1/4 cup soy yogurt
  • 2 lemons , juice and zest of
  • 1/4 cup sugar

Directions:

  1. Preheat waffle iron according to the manufacturer's directions.
  2. Sift together the flour, baking powder, baking soda, salt, and cornmeal in a large mixing bowl.
  3. In a med-sized bowl, mix together the oil, soy milk, yogurt, lemon juice, and sugar until well-combined.
  4. Make waffles according to the directions on the iron.
  5. Serve with blueberry sauce.
