Ingredients:

  • 1 1/3 cups flour
  • 1/4 cup sugar
  • 3/4 cup sugar
  • 2 eggs
  • 2 tbsp flour
  • 1/4 tsp baking powder
  • 3 tbsp lemon juice

Directions:

  1. Heat oven to 350°F.
  2. In a small bowl, combine all crust ingredients.
  3. Beat at low speed, scraping bowl often, until mixture is crumbly.
  4. Press into bottom of 8-inch square baking pan. Bake for 15-20 minutes or until edges are lightly browned.
  5. Meanwhile, in a small bowl, combine all filling ingredients except powdered sugar.
  6. Beat on low speed, scraping bowl often, until well mixed.
  7. Pour filling over hot crust.
  8. Continue baking for 18-20 minutes or until filling is set.
  9. Sprinkle with powdered sugar, cool.
