Lemon And Saltana Cookies

Ingredients:

  • 350 g - 12oz plain flour
  • 1/2 tsp baking powder
  • 140 g - 5oz butter cut into pieces
  • 175 g - 6oz caster sugar
  • 85 g - 3oz sultanas
  • 100 g - 4oz lemon curd
  • for the icing
  • 100 g - 4oz sifted icing sugar
  • 2 tblsp fresh lemon juice

Directions:

  1. Preheat oven to 200C gas 6
  2. Butter 3 baking sheets
  3. Sift flour baking powder, soda and salt into a bowl
  4. Add butter and rub in with your fingers
  5. Till mix resembles crumbs
  6. Stir in sugar and sultanas
  7. Add lemon curd and eggs and mix into a soft dough
  8. Shape into 30 balls
  9. Leave plenty of space for spreading
  10. Slightly flatten tops
  11. Bake for 12 -15 min until risen and lightly golden
  12. Leave to cool for 1 min on the baking sheets before transferring to wire wrack to cool completely
  13. Blend the icing sugar and lemon juice and drizzle over the cookies
