Lebanese Stuffed Chicken

Ingredients:

  • filling
  • 2 cups of rice
  • 100 g' pine nuts
  • 1tsp ground cinnamon, (yes! you read it right)

Directions:

  1. Prepare rice according to directions on package.
  2. Usually 2parts water ,1 part Rice, Salt to taste.
  3. Addition of Chicken stock optional
  4. Chop Onions finely
  5. Fry Onions until golden brown
  6. Put Pine Nuts iin a Dry pan , (no oil or fat) over low flame and stir constantly until golden brown
  7. Remove Pine Nuts immediately from flame so they don't burn
  8. Cover Chicken completely with ground Ginger. (If in doubt, add more)
  9. Rub Ginger into skin and call all those who are present to enjoy the smell with you
  10. Mix well all ingredients of filling, (Rice, Onions, Pine Nuts, Ginger, & cinnamon)
  11. Stand Chicken on end, (legs in the air), and put filling in with a spoon (not too tightly)
  12. Put Ckicken in roasting bag and remainder of filling in another roasting bag. (don't forget to make afew small holes in bgs with toothpick)
  13. Set oven to 180*c
  14. Put roasting bags on baking tray in centre shelf of oven
  15. Remove bag with filling after about 20 minutes
  16. Remove bag with Chicken after 90minutes
  17. Place chicken on platter with remainder of filling around it
  18. Smile when your guests shower you with compliments
