Ingredients:

Directions:

  1. Dice bell peppers and 1/2 of the onion.
  2. Place skillet over medium heat.
  3. Drizzle olive oil in pan.
  4. Sautee until tender.
  5. Slice eggplant long-ways.
  6. Salt and pepper both sides of chicken.
  7. Drizzle baking pan with olive oil.
  8. Place chicken on pan.
  9. Put 1 slice of cheese atop each piece of chicken.
  10. Stack i mushroom cap and i slice of eggplant on each piece.
  11. Place remaining slices on top.
  12. Bake at 375 until chicken is thoroughly cooked.
  13. Chop the other 1/2 of onion.
  14. In a pot add the tomato sauce, onion and parmesan cheese.
  15. Season with oregano, thyme, basily, parsley, salt and pepper.
  16. Cook over medium heat four 30 minutes stirring occassionally.
  17. Boil noodles according to directions on package and drain.
  18. Toss in tomato sauce.
  19. Spread peppers and onions evenly on platter.
  20. When chicken is done place on top of peppers and onions.
  21. Serve with noodles in tomato parmesan sauce and salad.
