Ingredients:

Directions:

  1. Fry bacon until medium crisp.
  2. Set aside, reserving drippings.
  3. Grate potatoes into a bowl.
  4. Put in a colander and let drain.
  5. Put potatoes back into a bowl.
  6. Add flour and eggs.
  7. Stir.
  8. Add milk, evaporated milk, grated onion and salt.
  9. Stir in bacon.
  10. Grease a rectangular baking pan with reserved bacon drippings.
  11. Pour potato mixture into pan.
  12. Bake at 350 degrees F.
  13. For 1 to 1 1/2 hours, until toasty brown on top but not burned.
  14. Serve with sour cream.
