Korean Egg Sandwich

Ingredients:

  • 4 pieces regular white bread
  • 1 tbsp butter
  • 2 eggs
  • 1 tbsp brown sugar
  • 1 tbsp ketchup

Directions:

  1. In a bowl, whisk the eggs, cabbage, carrot and onion.
  2. In a saute pan, melt some of the butter and toast both sides of the bread over medium heat, adding butter as needed.
  3. Remove bread and sit aside.
  4. Fry egg mixture in the remaining butter until done, like an omelet.
  5. Separate egg into two portions and place on two pieces of toast.
  6. Top with ketchup and sprinkle with brown sugar.
  7. Top with remaining slice of toast, cut in half and serve.
