Key Lime Squares With Macadamia Crust

Ingredients:

Directions:

  1. Process 1 st 5 ingredients in a food processor until finely ground
  2. Press mixture into a greased aluminum foil lined 13 x 9 inch pan, allowing foil to extend over edges of pan
  3. Bake at 350 degrees f. for 20 minutes or until golden brown......cool on wire rack............
  4. Heat sugar and 1/2 cup key lime juice over low heat, stirring until sugar dissolves.....
  5. Remove from heat and set aside..................
  6. Sprinkle gelatin over 2 tablspoons of key lime juice in a medium bowl, stir in gelatin mixture, let stand for 3- 5 minutes........
  7. Add hot mixture to gelatin mixture, stirring until gelatin dissolves.....
  8. Whisk in sweetened condensed milk. and 1 teaspoon key lime rind
  9. Place bowl in a larger bowl filled with ice,,,,,,,,,,,,,whisk mixture 10 minutes or until partially set
  10. Fold in whipped cream..
  11. Pour over prepared crust........
  12. Cover and chill for 8 hours........
  13. Use foil to lift out of pan
  14. Peel foil away and cut into squares....and garnish with key lime rind....
  15. Makes 24 squares.............
