Ingredients:

  • 1 cup sifted all-purpose flour
  • 1/4 cup sugar
  • 1/2 cup butter
  • 1/4 tsp vanilla
  • 5 (8 oz) packages cream cheese
  • 1/4 tsp vanilla
  • 1 3/4 cups sugar
  • 3 tbsp flour
  • 1/4 tsp salt
  • 4 -5 eggs (to equal 1 cup)

Directions:

  1. Combine first three ingredients.
  2. Cut in butter until mixture is crumbly.
  3. Add egg yolks and vanilla.
  4. Blend thoroughly.
  5. Pack 1/3 of dough on bottom of 9 spring-form pan with sides removed.
  6. Bake in 400 degree oven about 8 minutes or until golden.
  7. Cool.
  8. Attach sides and bottom.
  9. Butter and pat remaining dough to sides 1 1/4 high.
  10. Filling:.
  11. Let cream cheese stand at room temperature to soften.
  12. Beat until creamy, add vanilla and lemon peel.
  13. Mix last 3 ingredients separately and gradually blend into cheese.
  14. Add eggs and egg yolks one at a time, beating after each just to blend.
  15. Gently stir in whipping cream.
  16. Turn into greased, lined pan.
  17. Bake at 450 degrees for 12 minutes.
  18. Reduce to 300 degrees and continue baking for 55 minutes.
  19. Remove from oven and cool.
  20. Loosen sides with spatula after 30 minutes and remove sides of pan at the end of 1 hours.
  21. Allow to cool 2 hours longer before glazing with fruit (optional).
