Ingredients:

  • 1/2 lb purple peruvian potatoes, washed and cut in half - skin on
  • 1/2 medium/large onion sliced thin
  • salt and pepper to taste
  • 1/8 - 1/4 cup vegetable oil

Directions:

  1. Preheat oven to 450
  2. Take washed and halved potatoes and boil until fork tender
  3. Drain water and return potatoes to pan
  4. Toss potatoes and onions with vegetable oil
  5. Crush rosemary in finger tips and sprinkle on potatoes
  6. Season liberally with salt and pepper
  7. Add to roasting pan and put in oven
  8. Roast until golden brown and delicious.
