So this is my revamped home fried potato recipe. i have landed on the purple peruvian potato and it makes these AMAZING. you don't need to use the purple potatoes and can choose one of your favorites. you can also convert this easy to a savory side dish by adding a clove or two of minced/chopped garlic and some extra rosemary.
Ingredients:
1/2 lb purple peruvian potatoes, washed and cut in half - skin on
1/2 medium/large onion sliced thin
salt and pepper to taste
1/4 tsp dried rosemary
1/8 - 1/4c vegetable oil
Directions:
1. Preheat oven to 450
2. take washed and halved potatoes and boil until fork tender
3. drain water and return potatoes to pan
4. toss potatoes and onions with vegetable oil
5. crush rosemary in finger tips and sprinkle on potatoes
6. season liberally with salt and pepper
7. add to roasting pan and put in oven
8. roast until golden brown and delicious.
