Jicama, Chimol and Black Bean Salad

Ingredients:

  • 4 oz onion
  • 9 oz tomato
  • 17 1/2 oz jicama
  • 1 1/2 oz cilantro
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 cups

Directions:

  1. Chop all ingredients, except beans, into small cubes and toss with lime juice, salt and pepper.
  2. Add black beans and serve chilled.
