Jelly-Topped Peanut Butter Muffins

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup cornmeal
  • 3 tbsp sugar
  • 1/2 tsp salt
  • 2 tbsp honey
  • 2 large eggs
  • 1 cup milk

Directions:

  1. Combine first 5 ingredients in a large bowl; make a well in center of mixture.
  2. Combine peanut butter and honey; stir in eggs and milk. Add to dry ingredients, stirring just until moistened.
  3. Spoon into greased muffin pans, filling three-fourths full. Spoon 1 teaspoon jelly in center of each.
  4. Bake at 375° for 20 minutes or until golden. Remove from pans immediately, and cool on wire racks. Serve warm with additional jelly, if desired.
