Japanese Eggplant with Mirin

Directions:

  1. Slice the eggplant into 1 inch disks, soak in salt water for a few minutes, rinse w/cold water and squeeze out extra liquid
  2. Saute in oil until browned, around 8 minutes
  3. Add Mirin, soy sauce, ginger juice and chili paste and cook until tender and glazed
