Directions:

  1. In a large oven-proof pot over medium heat:
  2. To 2 1/2 T cooking oil, add ... 1 c smoked sausage and 1/2 c ham which have been cut in medium sized pieces - cook umtil sausage is almost crisp (approx 10-12 min)
  3. Add ... 1 c celery, 1 1/2 c onion & 3/4 c green bell pepper which have been chopped - cook about 8 min, until veggies are tender but still crisp
  4. Raise heat to high - add... 3/4 to 1 c chicken cut in bite-sized pieces - cook approx 2 min
  5. Reduce heat to medium - add... 1 1/2 t minced garlic, 1 t tobasco sauce, 2 bay leaves, 1 1/2 t salt, 1 1/2 t dried oregano leaves, 1 1/4 t white pepper, 1 t black pepper, 3/4 t dried thyme leaves - cook approx 5 min
  6. Add...4 medium sized tomatoes, peeled and chopped - cook approx 7 min
  7. Add...3/4 c tomato sauce - cook approx 8 min
  8. Add...2 c water & bring to a boil
  9. Add...1/2 c chopp3ed green onion
  10. Add... 2 c uncooked white rice
  11. Remove from heat, cover and bake 350 for approx 30 min (or until rice is soft) ... SERVE!!!
