Italian Grilled Zucchini and Red Onion

Ingredients:

Directions:

  1. Prepare grill to medium-high heat.
  2. Combine olive oil, red onion and zucchini (cut lengthwise) in a large bowl. Sprinkle zucchini mixture with half of the salt and pepper mixture, toss gently to coat.
  3. Arrange vegetables in a single layer on a grill rack; grill 4 minutes on each side or until zucchini is tender and vegetables are well marked.
  4. Remove zucchini from grill; reduce heat to medium-low. Grill onions an additional 5 minutes or until tender.
  5. Combine zucchini, onion, and vinegar in a large bowl, tossing to coat. Sprinkle with remaining salt/pepper mixture, cheese, and mint.
