Ingredients:

Directions:

  1. Mash the potato; add egg yolks; mix well.
  2. Add salt, pepper, lemon juice and chives.
  3. Beat egg whites until stiff.
  4. Fold into potato mixture.
  5. Spray skillet with cooking spray.
  6. Use a large spoon and drop omelets into medium hot skillet.
  7. Cook until done.
