Individual Grape Upside Down Cakes

Ingredients:

  • 1/2 cup apple jelly
  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 1 cup milk
  • confectioners' sugar , for dusting

Directions:

  1. Preheat oven to 400 degrees F.
  2. Grease 12 cup muffin tin, then spoon 2 teaspoons apple jelly into each, and divide grape halves into each cup.
  3. In a large bowl, whisk together flour, sugar, baking powder and salt.
  4. In a separate bowl, whisk together milk, butter, and egg.
  5. Stir milk mixture into flour mixture just until moistened.
  6. Divide dough into muffin cups and bake until golden, about 15 to 20 minutes (wooden toothpick should come out clean).
  7. Leave cakes in muffin tin about 2 minutes, then remove to cool on cooling rack.
  8. Dust with confectioners' sugar just before serving.
