Indian Coconut Soup

Ingredients:

  • 2 tbsp butter
  • 3 tbsp honey
  • 1/2 tsp cardamom
  • 1/2 nutmeg
  • 1/4 tsp fennel
  • 2 cups milk

Directions:

  1. Sautee coconut in butter until toasted, stirring well.
  2. Add 1/4 cup pistachios, sautéing a little longer.
  3. Add honey and spices and stir.
  4. Add milk and coconut milk, stirring slowly.
  5. Heat but don't boil.
  6. Froth individual servings in blender or espresso machine if desired.
  7. CAUTION: Be careful not to put more than one serving at a time in the blender or it may overflow and scald you.
  8. Serve garnished with pistachios.
