Hot Water Cornbread

Ingredients:

  • 1 cup cornmeal
  • 1/8 tsp baking powder
  • 1 tsp sugar
  • 1/8 cup half-and-half
  • 1/2 tsp vegetable oil
  • 3 tsp butter

Directions:

  1. Combine first three ingredients in a bowl.
  2. Stir in half-and-half and 1T oil.
  3. Gradually add boiling water, stirring until batter is consistenacy of grits.
  4. Heat 0.5 of oil in a heavy skillet.
  5. Fry 0.25 cup patties 3 minues per side or until golden brown.
  6. Drain on paper towels and serve with softened butter.
