Ingredients:

  • 1/2 cup sugar
  • 1 egg
  • 2/3 cup honey
  • 2 3/4 cups all-purpose flour
  • 1 tsp salt

Directions:

  1. In a large bowl, cream vegetable shortening,
  2. Sugar, egg, honey, and lemon extract until light
  3. And fluffy. Sift in flour, baking soda, and salt;
  4. Stir until well blended. Refrigerate dough at
  5. Least 1 hour or overnight.
  6. Preheat oven to 375 degrees. Lightly grease
  7. Cookie sheets. On a lightly floured board, roll
  8. Dough to 1/4-inch thick; cut into desired
  9. Shapes with cookie cutters. Place 1 inch apart
  10. Onto prepared cookie sheets.
  11. Bake 8 to 10 minutes or until edges are light
  12. Brown. Remove from oven and cool on wire
  13. Racks. When cool, frost with Milk-Frosting
  14. And decorate if you wish.
  15. Yields 5 dozen cookies.
  16. MILK FROSTING
  17. 1 cup powdered sugar
  18. 1/2 teaspoon lemon extract
  19. 1 to 1 1/2 tablespoons milk
  20. In a small bowl, combine powdered sugar,
  21. Lemon extract, and enough milk to make
  22. Frosting easy to spread. Tint, if desired, with a
  23. Few drops of food coloring.
