Honey Crunch Pecan Pie

Ingredients:

  • 1/4 cup sugar
  • 1/4 cup firmly packed brown sugar
  • 1 tbsp. bourbon
  • 1 teasp. vanilla
  • 1/2 teasp. salt
  • 1/4 cup plus 3 tbsp. firmly packed brown sugar
  • 1/4 cup butter
  • 1/3 cup honey
  • 2 cups pecan halves

Directions:

  1. Preheat oven
  2. In a large bowl combine the first 8 ingredients
  3. Stir well with a wire whisk until blended
  4. Stir in the chopped pecans
  5. Spoon the pecan mixture into the crust
  6. Bake in a 350' F oven for 35 minutes.
  7. If edge of crust browns too quickly cover with a strip of aluminum foil

  9. While pie is baking ...in a medium saucepan bine 1/4 cup plus 3 TBSP. of brown sugar, 1/4 cup butter, and honey.
  10. Cook mixture for 2 minutes over medium heat or until the sugar dissolves and the butter is melted...stir the mixture often
  11. Add pecan halves and stir gently until all the pecans are coated.
  12. ...............................................................................
  13. Spoon the pecan mixture evenly over the pie.
  14. Bake 12 more minutes or until the topping is bubbly
  15. Let cool completely on a wire rack
  16. Yields about 8 servings...
