Ingredients:

  • 1 1/4 cups honey
  • 1 cup oil
  • 1/2 cup plus 2 tbsp. boiling water (dissolve coffee in this)
  • 1 1/4 cups dark brown sugar
  • 4 eggs
  • 1 tsp heaping cinnamon
  • 1 tsp heaping mixed spice
  • 1 tsp ginger
  • 1 (8 oz) package cream cheese
  • 1/2 cup butter
  • 1 tsp vanilla
  • 1 lb confectioners' sugar

Directions:

  1. Beat together the honey, oil , coffee and sugar. Beat in the eggs and then the rest of the ingredients sifted together.
  2. Bake in greased shallow pan 12x10x2 at 325F for 1 hour.
  3. Cake is done when toothpick inserted in center comes out clean.
  4. PECAN ICING:.
  5. Soften the cream cheese and butter. Mix well with remaining ingredients. Spread on cake.
