Ingredients:

  • 1/4 cup butter, softened plus
  • 2/3 cup honey

Directions:

  1. Cream butter until light and fluffy; gradually add honey, beating well.
  2. Beat in lemon rind.
  3. Chill butter mixture several hours or overnight.
  4. Serve with muffins or toast.
