Ingredients:

Directions:

  1. Place tomatoes and onions along with 1/4 cup of coarse salt in large contain and cover with ice cubes
  2. Allow to sit overnight
  3. Next drain well for at least 1/2 hour
  4. Add 3 cups of white sugar
  5. 2 cups vinegar
  6. Peppers
  7. Celery
  8. Mustard seed
  9. And jalapeno peppers and simmer on stove for two hours with lid off
  10. In separate bowl mix 3 tbsp corn starch, 3 tbsp vinegar and 1 tsp cayenne pepper
  11. Add to salsa stirring constantly until desired consistency is obtained
  12. Bottle and enjoy
