Homemade Grilled Chicken Noodle Soup

Ingredients:

Directions:

  1. Noodles: Combine all ingredients in a medium bowl until they form a dough.
  2. Roll dough thinly out on a lightly flour coated surface.
  3. Cut dough into thin 2 inch pieces.
  4. Set to the side and let dry.
  5. Chicken: Combine salt, pepper, olive oil, garlic and chicken in a medium bowl and marinade for 2 hours.
  6. Place chicken on a hot grill cooking all the way through and creating a nice char.
  7. Soup: In a large pot bring olive oil to medium heat.
  8. Add garlic, sweet yellow onion, celery and baby carrots and saute for about 10 minute.
  9. Add 6 cups chicken stock.
  10. Bring to a slow boil.
  11. Add noodles.
  12. Reduce heat to a simmer.
  13. Simmer for 35-40 minute.
  14. Add chicken.
  15. Simmer for another 10-15 minute.
  16. Serve and enjoy!
