Ingredients:

  • 1 tsp allspice
  • 1/2 tsp baking powder
  • 1-1/2 cup chopped pecans
  • 1 tsp cinnamon
  • 3 eggs
  • 2 cup flour
  • 1 tsp nutmeg
  • 1 can pumpkin
  • 1/2 tsp salt
  • 3 cup sugar

Directions:

  1. In a bowl, combine the sugar, flour, spices, baking powder and salt. In another bowl, combine the eggs, pumpkin, oil and vanilla; mix well. Stir into dry ingredients just until moistened. Fold in pecans.
  2. Spoon into two ungreased and floured 8 x 4 x 2 in. baking pans. Bake at 350 for 65 to 75 minutes. Cool in pan for 15 minutes.
  3. Yields: 2 loaves, 12 slices per loaf.
  4. Calories, 15g fat, 2g fiber, 3g protein.
