Ingredients:

  • 2 tsp salt
  • 1 tsp pepper
  • 1/2 cup shortening

Directions:

  1. Combine flour, salt, and pepper in a medium mixing bowl; stir well. Dredge each cleaned quail in flour mixture.
  2. Melt shortening in a large cast-iron skillet; add quail, and brown on both sides. Remove from skillet, and drain well on paper towels.
  3. Transfer quail to a lightly greased 2-quart casserole. Cover and bake at 350° for 25 minutes or until quail is tender. Serve quail over Wild Rice.
