Ingredients:

  • 1- cup cornmeal
  • 2- large eggs
  • 1- tbsp sugar
  • pinch of slat
  • 1/4- cup buttermilk
  • 1/3- cup + 1-tbsp water
  • oil for frying (i use canola but the recipe called for vegetable oil or butter)

Directions:

  1. Mix together all the ingredients except the oil
  2. Heat the oil for frying and drop 2-tbspn of batter into skillet for each cake.
  3. Cook cakes about 2 minutes then flip and cook 1 more minute on other side.
  4. Drain on paper towel
  5. Serve hot with honey or syrup
  6. (Makes 15 cakes)
