Hippieladys Beer Cheese Soup

Ingredients:

  • 4 cups beer (5 if your a sampler cooker)
  • 1/8 - 1/4 cup finely chopped onion ( according to taste)
  • 1/2 cup butter (soft )
  • 1/2 cup flour
  • dash white pepper (i prefer more than a dash, but it's to taste)

Directions:

  1. Grate all cheese
  2. Bring beer to a boil in large pan, reduce by approximately 1/2. Add chicken stock, pepper and onion, bring back to soft boil.
  3. In a separate dish, combine butter and flour and mix into a paste. Stir into the mixture. Boil for a few minutes longer
  4. Remove from heat. Add the cheese and stir well
  5. After serving into bowls, scattter freshly popped popcorn over the top. Not only does it hold in the heat, it is DELICIOUS
  6. Make 12 cups
