High Protein Bread

Ingredients:

  • 1 package yeast
  • 2 tbsp honey
  • 1/2 cup soy flour
  • 3 tbsp wheat germ
  • 2 tsp salt

Directions:

  1. Dissolve yeast and honey in 3 cups lukewarm water in large bowl.
  2. Let stand for 5 minutes.
  3. Sift next 3 ingredients together in bowl.
  4. Stir in wheat germ.
  5. Add salt and half the dry ingredients to yeast, beating well until elastic.
  6. Add butter and enough remaining flour to make soft dough.
  7. Knead on floured surface until smooth and elastic.
  8. Place in greased plastic bag.
  9. Chill overnight.
  10. Punch dough down and shape into 2 large or 3 small loaves.
  11. Place in greased loaf pans.
  12. Let rise until doubled in bulk.
  13. Bake at 350 degrees for 50 to 60 minutes, covering with foil if bread browns too quickly.
