Ingredients:

  • 2 tbsp butter or 2 tbsp vegetable oil
  • 2 medium carrots , cut into thin strips
  • 1 tsp salt
  • 3 small zucchini , cut into thin strips
  • 3 small yellow squash , cut into thin strips
  • 1 medium red bell pepper , cut into thin strips

Directions:

  1. Melt the butter in a large skillet over medium-high heat; add the garlic and saute for 1-2 minutes.
  2. Add carrots, salt, and lemon pepper; saute for 2-3 minutes.
  3. Add the rest of the ingredients; saute for 3-4 minutes until crisp-tender.
