Ingredients:

  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp cinnamon
  • 1 egg (beat w/ 1 tbsp. water)
  • 1/2 cup honey
  • 1 tbsp molasses
  • 1/2 tsp nutmeg (optional)
  • 1/2 cup oil (can use applesauce to supplement some of the )
  • 1/2 cup raisins (optional)
  • 1 1/2 cup rolled oats
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1/2 + cup walnuts

Directions:

  1. Mix all dry ingredients in large bowl
  2. In med. bowl, mix all wet ingredients
  3. Mix wet with the dry, add a bit more flour if needed. If it isn't binding well, you may wish to add an egg white
  4. COOL the mix for 20 min. in fridge.
  5. Preheat oven to 335
  6. Drop by teaspoonfuls onto baking sheet.
  7. Bake 15-20 min.
  8. Cookies freeze well and make a great snack!
