Ingredients:

  • 1 cup carrot
  • 1 cup dates
  • 1 cup raisins
  • 4 1/2 cups flour
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp ground nutmeg
  • 1/4 tsp allspice
  • 1/4 tsp clove
  • 1 cup butter
  • 2 cups sugar
  • 3 eggs
  • 1 cup walnuts

Directions:

  1. Grind the cut-up pared carrots, apple cored and cut into wedges, orange cut into wedges, pitted dates and raisins in food processor, using medium blade. set aside.
  2. Sift together butter and sugar into bowl until light and fluffy, with electric mixer at medium speed. Add eggs one at a time, beating well after each addition.
  3. Gradually stir dry ingredients into creamed mixture, mixing well. Stir in ground fruit mixture and chopped walnuts. Drop mixture by teaspoonfuls about 2 inches apart on greased cookie sheets.
  4. Bake in 350 degree oven 10 to 12 minutes or until golden brown. Remove from baking sheets; cool on racks.
