Halibut With Jager Sauce

Ingredients:

  • 1 lb halibut fillet
  • 1/4 cup vegetable oil
  • 2 tbsp olive oil
  • 1 garlic clove
  • 1 1/2 cups mushrooms
  • 1/2 tsp thyme
  • 1/2 cup heavy cream
  • 2 tbsp red wine (deglaze the pan)

Directions:

  1. Salt and pepper flour to taste.
  2. Dredge halibut in flour.
  3. Fry in oil until golden brown.
  4. Remove and place in oven to keep warm.
  5. Fry green onions in olive oil until they are slightly brown.
  6. Add garlic and mushrooms and cook until mushrooms are tender.
  7. Deglaze with red wine.
  8. Add Heavy cream and simmer until sauce thinkens so to coat a metal spoon.
