Ingredients:

Directions:

  1. In a 3-quart saucepan, heat the oil over med-high heat.
  2. Add in the onions, celery, and bell peppers; stir/saute until softened, about 3 minutes.
  3. Stir in the chili powder until absorbed; add in the tomatoes; cook/stir, until softened, about 4 minutes.
  4. Add in the broth, water, bay leaves, oregano, Tabasco, basil, and thyme; bring to a boil.
  5. Add rice; decrease heat and simmer, uncovered, 20 minutes.
  6. Stir in okra and salt; return to a boil; decrease heat and simmer 10 minutes or until okra is tender.
  7. Discard bay leaves.
