Grilled N Chilled Squash And Ginger Soup

Ingredients:

Directions:

  1. Slice squash in half length-wise
  2. Sprinkle with salt, pepper and olive oil
  3. Grill on high heat until you achieve good grill marks then chop into cubes
  4. Chop onion roughly
  5. Add olive oil to pan
  6. Saute chopped onion and squash on medium-high heat for 3 minutes
  7. Remove from pan and place into blender; puree
  8. Pour blended ingredients into pot
  9. Add 1 tablespoon finely chopped ginger and 1/2 tablespoon minced garlic; set burner to low heat
  10. Add 3/4 - 1 pint heavy cream and 1-2 Tablespoons of butter; whisk ingredients and simmer for 5 minutes
  11. Add one pinch red pepper, 1 pinch black pepper, and salt to taste.
  12. Simmer for additional 10-15 minutes until all flavors are well infused
  13. Remove from heat and place in refrigerator and cool for 2-3 hrs
  14. Serve with toasted baguette and garnish with cilantro or flat-leaf parsley
