  • 2 canned chipolte chiles

  3. Try red, yellow, or sweet onions (such as Vidalia) — or a mix of all three — to make these sweet and spicy onion rings. When cooking on an outdoor grill, use a grill topper or a vegetable basket so the onions don’t slip through the grate.

  5. Prep time: 10 minutes
  6. Cook time: 12 minutes

  8. Medium onions, cut into 1/2 thick rounds
  9. /4 teaspoon salt
  10. /8 teaspoon freshly ground black pepper
  11. Canned chipotle chiles in adobo, rinsed, seeded, and minced
  12. Teaspoons fresh lime juice
  13. Instructions
  14. Lightly coat a grill or grill pan with cooking spray and heat to medium-high.
  15. In a medium bowl, toss onions with salt and pepper (rings can separate). Grill onions, turning occasionally, until lightly browned, 10 to 12 minutes. Return onions to bowl, add chiles and lime juice, and toss until the onions are well coated. Serve warm.
