Grilled Chicken Breasts and Asparagus With Orange Glaze

Ingredients:

Directions:

  1. Heat the grill to medium high heat.
  2. Combine orange juice, ginger, coriander and cayenne in a medium sauce pan.
  3. Bring to a boil over high heat.
  4. Simmer until the mixture has reduced to 1/2 cup about 6-8 minutes.
  5. Transfer the glaze to a bowl and stir in brown sugar.
  6. Toss asparagus with vegetable oil and season with salt and pepper to taste.
  7. Grill, turning once until tender and streaked with grill marks 4-5 minutes.
  8. Transfer to serving platter and tent with foil.
  9. Brush chicken with half the glaze and season with salt to taste.
  10. Grill smooth side down about 4-5 minutes.
  11. Brush with remaining glaze and turn.
  12. Continue to cook until the chicken is done 4-6 minutes (160°F at center).
  13. Serve with asparagus.
