Green Tomato Pie

Ingredients:

  • 1 1/3 cups sugar
  • 6 2/3 tbsp flour
  • 1 1/3 tsp salt
  • 1 1/3 tsp nutmeg or 1 1/3 tsp cinnamon
  • 4 tbsp lemon juice (or 1-1/3 tbsp. white vinegar)
  • 1 1/3 tbsp butter

Directions:

  1. Mix together: sugar, flour, salt, nutmeg or cinnamon.
  2. Mix lightly through: green tomato slices, lemon juice (or vinegar), grated lemon rind Place mixture in unbaked crust.
  3. Dot with butter, Cover with top crust, Bake, 35-45 minutes, in a 425° oven, until nicely browned.
  4. Cool on wire rack- Serve slightly warm.
