Directions:

  1. Cook first 4 ingredients. Stir often. Season with salt and pepper.
  2. Stir together cucumber, and next 3 ingredients. Add 1/4 t salt. Spoon 2 T of sour cream mixture down center of flour tortilla. Top with beef mixture and tomatoes. Roll up and serve with remaining cucumber mixture.
