  1. Preheat oven to 350 degrees F., grease a 9 or 10 inch glass baking pan with cooking spray
  2. In a medium nonstick skillet over medium heat, add the olive oil, onion, garlic, bell pepper, oregano, salt, black pepper, and red pepper flakes. Cook, stirring frequently, until onion softened, about 3 to 5 minutes. Remove pan from heat.
  3. In a medium mixing bowl, combine 1/2 cup of feta, mozzarella, eggs, cream, spinach, and kalamata olives. mix well. be sure to break up any pieces of spinach that are stuck together. Add pepper and onion mixture and mix well.
  4. Pour mixture into preheated pan. Sprinkle with remaining 1/4 cup feta and bread crumbs. Bake uncovered for 35 to 40 minutes. Spinach bake is ready when it's puffed and golden on the edges. Let spinach bake rest for 15 minutes before cutting into 8 to 10 slices. Serve warm.
