Greek Salad Dressing

Ingredients:

  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp sugar
  • 1 1/2 tsp dry mustard
  • 1 1/2 tsp oregano
  • 1/2 tsp lemon juice
  • 1 1/2 cups olive oil

Directions:

  1. Combine all ingredients EXCEPT olive oil.
  2. Let stand 15 minutes.
  3. Add olive oil gradually while whisking.
  4. Store in refrigerator.
  5. SALAD SUGGESTION: Make a large tossed salad of leafy lettuce, crumbled feta cheese, chopped tomatoes, sweet onions, fresh black olives, and chopped or sliced cucumber. Add salad dressing to taste, toss and serve.
  6. OPTION #1: Substitute 1/2-3/4 cup. vegetable oil for a lighter dressing.
  7. OPTION #2: Add 1-2 teaspoons dillweed for extra flavor.
